1 1/2 cups Enchilada sauce
1 teaspoon cumin

How Do I Make Leftover Beef Enchiladas?

Here is how you make Leftover Beef Enchiladas:

Spray saute pan with cooking spray. Add chopped onions, garlic and saute till tender. Add bell peppers and beef. When beef is heated throughout, mix in chili peppers and add 1 c. enchilada sauce. Fill 8 8" tortillas with filling sprinkling with cheese. Reserve 1/2 cup of cheese for top. Place side by side in a 9x13" pan. Pour remainder 1/2 cup enchilada sauce over top of the enchiladas then sprinkle remaining cheese over top. Bake for 30-40 minutes at 350*.
