1 medium yellow onion, cut into 1/4 in. wedges
3 T chopped, salted peanuts
2 scallions, green and white parts, thinly sliced

Heat 1 1/2 T oil over med. high heat. Add 1/2 beef and brown well. Remove and add rest of beef. Brown well. Remove. Add rest of oil and heat, then add onion and cook 2-3 mins., stirring. Add garlic mixed with 1 1/2 tsp. oil and 1/2 tsp. black pepper. Cook and stir 30 seconds the add beef, stir well.
