1 cup carrots chopped

1 cup mushrooms, sliced
half cup red wine

Here is how you make Beef Pot Roast with Mushrooms:

Add olive oil to large kettle or dutch oven over medium heat. Add roast and season with salt and pepper. Brown on all sides. When browned add vegetables and cover, allowing veggies to soften and deglaze the bottom of the pot. Once the veggies are soft and most of the liquid has cooked off, add the red wine and simmer for about 30-45 min. Add enough water to cover about half-way and cook additional 2-2.5 hours. You can add potatoes at the end and finish in the sauce, but my family likes the potatoes seperate or sometimes we add tomatoes to the sauce and serve with polenta (we are Italian).
