***Please note!***The peppers were not added to the nutritional information, so be sure to add them to your tracker if you use this recipe, unless you're eating them as meatballs.Preheat oven to 375FCut and prepare the peppers to be stuffed by removing the top and emptying the insides, including the seeds. Chop the top of the peppers and set aside.In a large bowl, mix all ingredients except onion and chopped peppers. Once the spices have been fully mixed in, add the peppers and onion. Take small pieces at a time (its important to start small to avoid air pockets) of the meat mixture and push them into the very bottom of the pepper, and continue to use only small amounts until the whole pepper is filled. Place completed peppers in a deep pan. If there is leftover meat and no peppers to stuff, simply roll them in a ball like a meatball and place them in the pan.Cook for about 30 minutes (my mom always "smell tests" to see when they're done), until peppers are soft.
