Tasty, Moroccan dish with lots of protein and fruit. Cut back on the honey if you don't want it so sweet. you can substitute prunes for the apricots and lamb or chicken for the beef. Serve over steamed couscous or quinoa (my fave, more protein) or scoop it up with good quality bread. A crisp, bright, middle-eastern salad will help cut the sweetness (use any veggies and olive oil with lemon juice for dressing.)

How Do I Make Moroccan Beef with Apricots, Slow Cooker?

Here is how you make Moroccan Beef with Apricots, Slow Cooker:

Put everything but the apricots, honey, and one tsp of the cinnamon in the slow-cooker. Mix well and cook on low for 6 hours, stirring occasionally. 1 hour before your meal put the apricots in a small pot with enough water to cover by 1". Simmer for 10-15 minutes on low, partially covered, until tender. Replace water if needed to get them soft. Drain off the water, add 1/2 cup liquid from meat, the honey and remaining cinnamon. Cook on low until it starts to form a nice thick sauce--about 5-10 minutes. Be careful not to burn it. Add this to the meat. Toast the almonds in a dry skillet until lightly browned. Scrape out of the pan immediately as the residual heat will burn them if left in. Layer your grain, the meat and apricot sauce, and sprinkle with almonds.
