1 medium sweet onion, cut into 1/2" wedges
1 cup sliced carrots
1 medium green bell pepper, sliced
12 oz of beer, preferably ale
1 can (6 oz) Tomato paste
1 envelop of Italian salad dressing mix (~ 0.7 - 1 oz)
2 teaspoons of beef bouillon granules
2 teaspoons Worcestershire sauce
1 teaspoon sugar
Salt & Pepper to taste
Hot mashed potatoes (optional - to serve on top of)

Here is how you make Rustic Beef and Ale Ragout - Slow Cooker:

Heat oil in a large skillet over medium-high heat. Add half of the beef and cook until browned, then repeat with the other half. Place the browned beef in the slow cooker and arrange onion, bell pepper, carrots, celery and tomatoes on top.Return the skillet to med-high heat. Stir together the remaining ingredients (ale, tomato paste, salad dressing mix, beef bouillon, sauce, sugar, salt & pepper). Stir and cook until smooth, pour over the beef and vegetables and stir to mix. Cook on HIGH for 4-6 hours.
