Ingredients:
2 Tbs flour
1/2 tsp Salt
1 tsp freshly ground Black Pepper
4 Tbs Olive Oil, divided
2 lbs Beef - Stew Meat
1-1/2 cups Dry Red Wine, I used Zinfandel
1 Cup water
2 stems of Fresh Oregano about 6" long
2 stems Fresh Thyme, about 6" long
1 Bay Leaf
2 Medium Onions, chopped
3 Cloves Garlic, chopped
1/2 lb Mushrooms, sliced
1 lb Carrots, cut in chunks
1/2 lb Green Beans, cut in 1" pieces
1 lb Baby potatoes, whole


How Do I Make Bea's Beef Stew?

Here is how you make Bea's Beef Stew:

Put the flour, salt and pepper in a brown paper lunch bag or plastic bag, close the top and shake well. Add the beef and shake well to coat all the pieces. Heat a large dutch oven and add 2 Tbs of olive oil. Brown the beef in the oil, in 3 batches. Add wine and water, bring to a boil, then turn down the heat to a simmer.Pour the remaining olive oil in a large frying pan, heat for a few minutes on medium, then add the chopped onions and saute until limp and starting the brown. Add the garlic and cook for 2 minutes, then add mushrooms and cook for a few minutes to heat. Then pour the onion-mushroom mix into the pot with the beef. Add the oregano, thyme and bay leaf.Simmer for 2 hours or more until the beef is very tender. Check occasionally to make sure the liquid hasn't boiled away, if needed add more water. when the meat is cooked, add carrots, green beans and potatoes and cook about 20 minutes until the potatoes are done.
