1 c raw carrots - cut into bite sized pieces
1 c diced onion
.5 c diced celery
2 large potatoes - peeled and diced
3-4 tbs flour
12 oz top sirlion - cut into bite sized pieces
1 C chicken broth - low sodiium
2 beef bouillion
1 can peas


How Do I Make Leslie's Beef Stew?

Here is how you make Leslie's Beef Stew:

wash- peel and dice all vegetables - in large pan heat 1 tbs EVOO and add onion-celery and carrot - saute until onions are translucent.. In bowl add flour- salt- pepper to taste - coat meat in flour mixture. Add coated meat to vegetables and brown.When meat is browned add chicken stock and 1 C water to pot - add diced potatoes and bouillion cubes- cover and let simmer for 15-20 minutes - remove cover and let simmer for additional 15 minutes to cook off some of the liquid. When potatoes are cooked through add peas and heat for additional 5 minutes or so. The flour on the meat and the starch from the potatoes should have made the stew thick - if it's too thick add water to thin out - if it's not thinck enough -in a cup mix 1/3 C cold water and 1TBS corn starch- stir until dissolved - add to stew - that should do the trick.Number of Servings: 6Recipe submitted by SparkPeople user BOND-GIRL.
