6 large Sweet peppers (bell)
2 tbsp Extra Virgin Olive Oil
16 oz *93% Lean ground beef
1 Onion, yellow
2 clove Garlic
1 medium Zucchini, baby
2 cup Great Value Diced Tomatoes (in Tomato juice)
1 cup Jasmine enriched long grain rice, Mahatma, cooked
1.5 cup Colby and Monterey Jack Cheese shredded


How Do I Make Beef Stuffed Peppers?

Here is how you make Beef Stuffed Peppers:

Cook the rice and brown the beef, seasoning with salt and pepper if desired. While those are cooking, remove the tops of each of the peppers, remove the stem and chop the remaining of the tops. Clean out seeds and membranes from peppers. Slice each pepper in half.Once the ground beef is browned, remove from pan to a plate lined with a paper towel. Wipe excess grease from pan and add 2 tbsps. of olive oil. Add onion and peppers and allow to cook for 3 or 4 minutes, then add garlic and zucchini and cook about 1 more minute, add diced tomatoes and cook until everything is heated through. Stir in rice and beef and taste. Adjust seasoning as desired, (some red pepper flakes go good in this, but a little goes a long way). Add 1 cup of cheese and mix. Fill each half of pepper with a scoop of the mixture, laying on its back in a baking dish. Once all are filled, sprinkle with remaining cheese. Pour just a small amount of water into the bottom of the baking dish and cover with foil.
