Take as much stewing beef as you need or have (I often buy a round roast or pot roast on sale and cut into 1" or larger cubes). Put in Dutch Oven or Slow cooker. Pour equal quantities of red wine and V8 juice over the meat - just enough to cover. Season. Bring to boil and reduce temperature to simmer, uncovered, for 3 - 4 hours until broth forms a rich gravy. Serve over rice or noodles.Variations: Carmelise onions and minced garlic first.Freezes well.
