This makes 16 meatballs covered in a great red wine sauce.First: Mix all of the meatball ingredients, minus a quarter cup of bread crumbs. Roll 16 meatballs and roll in remaining bread crumbs (should be a light covering). Bake in the oven, in any dish you like, at 350 degrees for 32-35 minutes, the inside meat temp should be 160 degrees. Then, while the meatballs are baking:Fry the onions in the Olive oil, once they are tender add the blackberry jam and wine. Cook on medium until the mixture is reduced in half. Add the Vegetable broth and turn to high, reduce to half.
