Home Fried Potatoes with Onions (6 pototatoes cubed)
Mozzarella Cheese (1/2 cup)

Whole Wheat Tortilla, medium
Crisco Oil

How Do I Make Kathy's Breakfast Burrito?

Here is how you make Kathy's Breakfast Burrito:

Boil cubed potatoes until just about soft, then in a skillet on medium high heat, coat with 2 tbsp crisco oil, once heated add cubed potatoes (you can also add diced onions with this if you prefer) fry potatoes until nice and golden brown. (The potatoes will be soft, unless you decide to boil the potato's whole just until soft, and then refrigerate for 24 hours then they will crips up when fried) Put fried potatoes aside. Scramble eggs. In skillet on medium high heat coat with pam and once heated cook scrambled eggs. Once eggs, and potatoes are done, then you can assemble burrito. Take 1 tortilla and place about 2 tbsp of ham, put 2 tbsp of mozzarella cheese in middle, microwave for about 30 seconds to melt cheese, then add 2 tbsp of scrambled eggs, and 2 tbsp of potatoes, add 1 tbsp of salsa and wrap.
