Here is how you make Little Big Man Breakfast Burrito:

Preparation and Cooking:1. Dice onion and pepper, set aside.2. Remove casings from sausage. Using a non-stick skillet, break up and brown the meat over med-hi heat.3. Remove from heat. Dump meat into a collander and let the fat drain out.4. IMPORTANT: Using a paper towel, wipe excessive fat from skillet. 5. Add onions and peppers to skillet. Spray for 1/2 sec with cooking oil spray. Sautee over high heat until onions become translucent and begin to darken. Remove from heat and set aside.6. IMPORTANT: Using a paper towel, wipe excessive fat from skillet.7. Heat skillet and add egg beaters. They act like regular eggs so cook them to your liking then remove from heat.Assembly:I find it is easiest to lay out all 8 tortillas on paper towels, that way I get the proportions correct. For each burrito:1. Lay out a tortilla.2. Spread some refried beans across a line on the tortilla.3. Add some turkey sausage, eggs, cheese, salsa, onion and peppers.4. Wrap the tortilla and secure with a toothpick.Variations: I like to add some black pepper and chili powder to the onions and peppers for a kick. I also add a bit of salt and fresh parsley to the egg beaters, it makes a nice contrast. I use tin foil to wrap each burrito separately then reuse the tortilla zip lock bag to store half in the freezer. The other half go into the fridge for the week. Cooking time: 15 minutes. Serves 8.Reheating: Keep it in the tin foil. From the fridge it's 30 minutes in the toaster oven at 400 degrees. From the freezer to your mouth, it's 45 minutes at 500 degrees. Enjoy!
