Preheat oven to 350 degreesSpray a pyrex dish with non-stick sprayDice the potatoes, season them to taste, I use half of my listed seasoning.Place potatoes in pyrex dish and place dish in oven.Bake for 50 mins. or until slightly crisp on outside, and done in the middle.Dice your veggies, while the potatoes are cooking.Add veggies and sausage and rest of seasonings, to large skillet, mix well and cook until the sausage is no longer pink.When potatoes are done, add them and cook until potatoes are crispy and golden.Add whipped eggs and cook mixture until the eggs are completely done.Place tortilla on flat surface and fill with mixture until you will have a well-stuffed burrito, wrap burrito and place it inside a plastic bag.
