Lay 2 slices of ham in each one and try to push them down into the corners. You don't want very much sticking up or it will be likely to burn in the oven. Place 1T frozen diced potatoes and about 1teaspoon of bell pepper in each cup. Try to prep these about 30 minutes before the rest to let the potatoes thaw a bit.In a bowl, beat eggs and stir in the remaining ingredients.
