Here is how you make Breakfast Cups:

Spray a regular 12-cup muffin tin with cooking spray. Lay 2 slices of ham in each one and try to push them down into the corners. You don't want very much sticking up or it will be likely to burn in the oven. Place 1T frozen diced potatoes and about 1teaspoon of bell pepper in each cup. Try to prep these about 30 minutes before the rest to let the potatoes thaw a bit.In a bowl, beat eggs and stir in the remaining ingredients. Pour 1/4C into each ham cup - it's fine if the egg flows around the outside of the ham.Bake at 350 for 20-30 minutes or until puffy and browned.Use a metal spoon to pop them out hot onto your plate, or let them cool completely in the pan before removing to freeze.Serving Size:?Makes 12 cups
