I found out about pupusas, the national dish or El Salvador, this last week and felt I had to try them. Since you can stuff them with whatever you want I decided to make some breakfast ones.BTW I actually ended up making 64, or 32 servings, of them. I reduced it down to 16, or 8 servings for you. I actually tried first to just make a recipe for only 4 servings but I'm not sure how to only use 1 1/2 eggs . What Course Is Breakfast Pupusas?Breakfast Pupusas is for Breakfast. What Are The Ingredients For Breakfast Pupusas Recipe?The ingredients for Breakfast Pupusas are: 4 cups Instant Masa Flour For Tamales3 cups Water 1 tsp Salt 3 large Eggs 4 oz mild pork sausage 2 Green Onion Stalks (diced) 1/2 cup Shredded Cheddar Jack Cheese How Do I Make Breakfast Pupusas?Here is how you make Breakfast Pupusas: 1. Using a frying pan, brown the sausage and scramble the eggs into it.2. Let these cool completely - yes completely. You don't want the cheese melting yet.3. Once the sausage and egg scramble is cool add the cheese and the green onions and toss them all together.4. put this aside but in a spot that is handy5. put some water into a small bowl and drizzle a tiny amount of oil into it. You will be using this to keep your hands from sticking to the pupusas when you make them.6. In a separate bowl mix 2 cups of the masa and 1/2 teaspoon of the salt together7. Using your hands to mix in about 1 1/2 cups water little by little. Note that where you live and the days humidity will mean you may use more or less water. You are aiming for a pliable dough which feels damp but not soggy.8. Divide the dough you just made into 8 equal sections9, Dip your clean hand into the dish of oil water and rub your other clean hand with it gently to distribute it onto both palms and pick up one of the sections of dough.10. Passing this piece of dough back and forth between your hands form it into a ball and then flatten it into a disk.11. Put 1/8 cup of the egg, sausage, onion and cheese mixture into the center of this disk and wrap the disk around it forming it into a ball again.12. flatten the ball out but be careful not to break it or make it too flat. It should be be about the size of an adult woman's palm13. Put this onto a plate and make seven more in this same way.14. Repeat steps 6 - 13 with the remaining ingredients. Yes you could technically make all of the masa dough at once and divide it by 16 instead of 8 but I found this to be problematic.At this point if you want to save them for later you can individually wrap the pupusas in plastic and store them in the freezer. Put them in the fridge to thaw the day before you want to use them.15. Cook the pupusas like pancakes on a dry or nearly dry (you can add a little oil to grease the pan if needed) skillet or hotplate. Each side should take between 1 - 3 minutes and will be golden brown when done.16. Serve two pupusas at a time, stacked on top of each other. Serve with crema (sour cream), salsa, spicy coleslaw, guacamole, or whatever you want.
