This is a recipe my family created after the Runza restaurants stopped serving breakfast. Runza is a tradmarked sandwich that other parts of the country call cabbage rolls, cabbage burgers, etc. The names are endless. What Course Is Breakfast "runza"?Breakfast "runza" is for Breakfast. What Are The Ingredients For Breakfast "runza" Recipe?The ingredients for Breakfast "runza" are: 6 c. flour1 stick butter, melted 1/4 c. sugar 1 packet (oz) yeast 1 c. warm water 1 large egg **This ingredient list makes 1 batch of dough, but I only use 1/2 a batch to make the 27 mini-runzas that I made. I used the other 1/2 a batch to roll cinnamon rolls.** 18 large eggs 12 slices american cheese 1 package (16 oz) diced/cubed ham How Do I Make Breakfast "runza"?Here is how you make Breakfast "runza": Melt butter in microwave. Meanwhile, dissolve yeast in warm water. Mix together and add sugar to mixture. Stir until dissolved. Then, add egg. Slowly add flour (you may need a bit more or less depending on altitude) until mixed. **I use a kitchen aid mixer with a bread hook, but you could do it by hand too**Put dough aside and let rise at least 3 hours (you can also put in fridge over night)Before assembling Runzas, scramble 18 eggs and add ham. Keep mixture in pan until ready to assemble sandwiches. Cut dough into 24 equal sections. Roll into a thin circle. In middle of circle, add 1/2 slice of cheese. Then, add 1/24 of the egg/ham mixture on top. Fold in the edges of the dough and turn upside down on a baking sheet (sealed edges of dough will be the bottom of sandwich). Repeat process until all runzas are completed.Then, in a 350 degree oven, bake sandwiches until golden brown (since you are only cooking the dough this is what really matters).
