This is a great mini breakfast meal, with a glass of Diet V8 juice. I use Trader Joes Whole Grain Mini Pita Pockets (tricky to open, but fun to eat!) but half of the Alternative Pita Bread works too!Also any type of deli meat works in this (make sure to change the nutritional value) I use a middle eastern meat called basterma, but pastrami works great! In a small skillet on med. heat, melt the margarine. Cut up the pastrami slices into small bits, add to skillet and cook for 5 min. Add the egg beaters, cook for 5 min. Add the cheese, and scramble the eggs ( the way I do it is by folding one half of the egg onto the other half, and taking a spatula, I cut up the egg untill it is scrambled.) Sprinkle salt and pepper on the eggs.
