Spray a large, shallow flan/pie dish with cooking spray. 2. Put broccoli in a small saucepan with 2 cups of water. Cover and boil for about 3 minutes before straining. Do not cook the broccoli too much, since it will cook more when it comes time to bake the frittata. 3. Cook the bacon in a non-stick frying pan. If you prefer, you can also cook the bacon in the microwave, by putting the bacon pieces on a plate between a few pieces of paper towel. Zap it in the microwave for a couple of minutes at a time until it is cooked. Try and get rid of any extra fat on the bacon by absorbing it with a fresh piece of paper towel. 4. Put the milk and the breadcrumbs in a bowl and soak for 1minute. Add the bacon, broccoli, Parmesan cheese and eggs. Mix them all together and pour them into the dish. 5. Bake for 15 minutes, and then grill (or broil) for 1 to two minutes until it is golden on top. Serve immediately. Serves 6Try cooking these into smaller individual pans and eating them cooled.
