1 Tb active dry yeast
1 Tb sugar
1/2 cup warm skim milk, 105 degrees
1 Ts salt
2.25 all purpose flour

1 lb ground lean beef
1 cup chopped yellow or white onion
1 Tb canola oil
1 Ts garlic powder
1/4 cup skim milk
6 Oz velveta cheese, cut is 1/2 inch cubes
2 Tb yellow mustard


How Do I Make Matt's Mystery Burgers?

Here is how you make Matt's Mystery Burgers:

Breadput water, yeast, and sugar in stand up mixer bowl and mix. let it set 5-10 minutes until it is foamy. With the dough hook on the mixer, add the milk, salt. Slowly add the flour 1/2 cup at a time until the dough pulls away from the sides of the bowl. Remove and kneed a few minutes until smooth and firm. Put a few drops of canola oil in the mixing bowl. Place the dough in the bowl and turn to coat all over. Cover and let rise until doubled in size. Press down, kneed a little more and divide into 6 equal parts.FillingThis can be done while the dough is rising. Brown the meat in a large skillet. remove all grease and meat from the skillet and drain. Cook onion in canola oil until clear. Add meat, garlic powder, and milk to the onions. Stir and let simmer a minute. Add the cheese and mustard. Stir on low heat until cheese is combined. Assembly Roll each ball of dough out to a 6" circle. Place 3 tablespoons of mixture in the center of the dough. Brush the outer rim of the dough with water. Carefully pull the dough up over the filling and pinch to make a good seal. Flip the bun over and place it on a nonstick cookie sheet. Repeat with the the rest of the dough and filling. Let these rise 15 minutes.
