(about 20 minutes on low heat)Chop sun-dried tomatoes (3 or 4) into small pieces.Cut bacon into small pieces.Note for the bacon - If you trim off the fat of the bacon, use 3 pieces. If not, then use 2 (typical servicing size is 2) - chop it up - Do not cook!!!!!While the onions are cooking.....Slightly beat the 2 eggs so the yolks and whites are mixed well.Using hands, blend bacon, beef, and eggs together.Add the rest of the ingredients EXCEPT the bread crumbs and panko.Refrigerate until onions are ready.Let onions cool enough to handle, mix with ground beef, etc. NOTE - for added yummy flavor - cook burgers in same pan as onions (unwashed, of course)Add some of the bread crumbs and panko and mix well. Add more if you desire. Watch out for carbs!!!!Divide into 6 burgers... about 4 inches across and 3/4 to 1 inch thick.
