3 tsp Dark Miso
500g Kangaroo Mince (or 98% Fat Free ground beef)
1/3 cup Oat bran
1 large egg
2 tsp sugar
2 tbs Soy Sauce
1 tbs Hot Water

Here is how you make Japanese Soy Glazed Burgers:

Heat oil in small skillet, add onion and saut? over moderate heat until transparent. Remove skillet from heat. Add sake and miso, mixing together until well combined. Set aside to cool further.In a bowl, combine mince, oatbran and egg plus some freshly ground black pepper. Add onion mix and combine with hands. Work the proteins by picking up meat and trowing against bowl (like baseball into glove) several times. Divide mix into four equal portions. Form each burger into an oval shape and flatten out onto a piece of baking paper (big enough to go slightly up the sides of the frying pan). Set burgers aside to ?rest?. Burgers can be made the day before and left to rest in the fridge, covered with film.Meanwhile, in a small bowl combine ingredients for glaze and microwave to 1 minute. Stir until sugar is dissolved. You may also add 1tsp freshly grated ginger for a slight flavour change.Heat fry pan to high heat, add burgers on baking paper. Reduce to med-high, cover and cook to 5 minutes.
