Remove bacon when almost done. My mother never did this next step, but I drain all but about a teaspoon of the bacon grease from the pan and add two TBSP of olive oil. Then add the cabbage (and salt if desired). Cook down the cabbage for about 20 minutes. Meanwhile, boil a pot of water and add the noodles. Cook noodles to al dente. When the cabbage is cooked down and the noodles are ready, add the noodles to the cabbage and add the bacon back in. Let cook another 5 minutes to get the flavors together.
