Place fatty side up into a crock pot or oven safe skillet.Sprinkle jalapenos over the meat. Add fresh orange juice, lime juice, and lemon juice. Cook on low in crock pot for 10 to 12 hours or overnight. When meat is tender, remove the meat from the crockpot, shred it into smaller chunks. Reserve pan drippings. Boil pan drippings down to at least half. Heat a heavy skillet on high heat. Add some of the reduced pan drippings. Fry pork chunks in the heavy skillet until they are browned and crispy.
