In large skillet, cook sausage over med-high heat, stirring frequently until thoroughly cooked and no longer pink. In large mixing bowl, combine egg substitute, milk, mustard, salt, pepper, onion and garlic powder; stir well. Distribute half the shredded potatoes (sprinkle with salt and pepper) evenly in a buttered/oiled 9"x13" baking dish. Sprinkle with half the cheese, half the sausage and half the onions. Repeat layering using remaining potatoes, cheese, sausage and onions. Pour egg mixture evenly over casserole. Bake uncovered for 60 minutes, or until eggs are set.
