- 12 ounces bacon
- 2/3 can coconut milk
- 1 large yellow onion
- 5 cloves garlic
- pinch of salt

- small bunch of green onion


How Do I Make Cauliflower Casserole?

Here is how you make Cauliflower Casserole:

Dice onion and garlic. Clean cauliflower and cut into large florets.In a large pot, saute onion and garlic over medium heat with a very small amount of olive oil.Add cauliflower and fill with water to cover. Add pinch of salt and pinch of pepper.Bring to a boil, then simmer for 9 minutes.Drain the pot, and use a potato masher to mash the mixture into a somewhat mashed state.Add 2/3 can of coconut milk.Preheat oven to 350.Pan fry 12 ounces of bacon.Pat grease dry.Reserve 3 slices of bacon. With the rest, crumble into bits and drop into the cauliflower mash. Stir the mash until well combined.Pour the mash into a 13x8 glass baking dish, and spread evenly.Crumble the rest of the bacon over the top of the mash.Dice 6 stalks of green onion. Sprinkle these on top of the mash.Place the glass dish in over and bake at 350 for 45 minutes (or until top edges become slightly brown.)Eat and enjoy.Serving Size:?makes 8 servings
