one tablespoon salt (not included in the ingredients because the water is discarded)
Water
1 1/2 cup dry Whole Wheat Penne Rigate (or other pasta of choice)
10 oz Tomato sauce or whole tomato blended
One hot Italian sausage
4 tablespoons TVP (Texurized Vegetable Protein)
1/4 green or red bell pepper chopped
Freshly ground black pepper
2 Tablespoons grated Parmesan cheese

Here is how you make Easy High Protein Eggplant Casserole:

Preheat oven to 350 degrees F.Wash and slice one half medium sized eggplant.In large bowl, cover eggplant with water and add Salt.Stir and then place plate on top to submerse eggplant.In medium sized saucepan bring about one quart of water to boil and prepare pasta as per instructions on box. (about ten minutes) In the meantime, take Italian sausage out of casing and fry in medium sauce pan. Remove excess drippings and add tomato sauce, and TVP, Oregano, and Basil. Stir and simmer about 10 minutes.When noodles are ready, drain and add olive oil, one tablespoon Parmesan cheese, and black pepper. Stir and place in Casserole dish. Reserve some Parmesan for top garnish later.Remove Eggplant from water and pat dry. Chop into small cubes and add to sauce.When eggplant turns translucent and sauce thickens (about 5 minutes), place mixture on top of noodles.Bake 30 minutes. Top with sprinkle of Parmesan.Serving Size:?Makes 4 one cup servings or as a side dish 6 servings
