3 thick slices hickory smoked bacon, diced
1/2 large onion, diced (about 1 cup)
2 large cloves finely chopped garlic
8 ounces ground chuck ( can also use leaner beef but flavor will be different)
8 cups (about 5 ounces) fresh baby spinach leaves
1 tablespoon Worcestershire sauce (I use Lea and Perrins)
1 can (15 ounces) black eyed peas, rinsed and drained (I use Bush's)
Salt and pepper to taste

Here is how you make Black Eyed Pea Stovetop Casserole:

Heat oil in pan until hot but not smoking. Add diced bacon and cook until nicely browned. Remove from pan and set aside.Add onions to pan and cook until softened. Add garlic and cook another 30 to 60 seconds.Add ground beef and cook until nicely brown and broken into small pieces. Add the Worchestershire sauce and stir to combine.Add spinach leaves and cook and stir until well wilted.Add rinsed and drained beans and cook through until everything is nice and hot (and the spinach is still bright green).Serving Size: Makes 2 large (2 1/2 cup) servings or 3 normal size servingsNumber of Servings: 2Recipe submitted by SparkPeople user EILEENNP.
