1/2 medium onion, chopped
3 garlic cloves, minced
1 lb. ground beef
1 medium red pepper, chopped
1 medium green pepper, chopped
3 medium carrots, chopped
1 cup quinoa, dry
2 cups water/chicken broth
1 cup water
1 cup spinach
Dried basil, oregano, thyme, cilantro
5-6 oz. crumbled feta cheese


How Do I Make Quinoa Casserole?

Here is how you make Quinoa Casserole:

In a large saucepan heat 2 cups water or chicken broth and 1 cup quinoa to a rolling boil. Cover and simmer for 30 minutes or until tendrils come out of the quinoa. Set aside. In a large frying pan or wok, heat 1 tbsp. oil. Add onion, garlic, and ground beef. Cook until meat is no longer pink. Add peppers and carrots. Add dried seasonings and cook for 10-15 minutes or until carrots are tender. You may need to add up to 1 cup of water to keep the mixture from sticking. Add cooked quinoa and stir and cook for a few minutes (2-3). Add chopped spinach and let wilt down while stirring. Add crumbled feta, cover, and remove from heat. Let stand about 5 minutes.
