In skillet, brown 1 pound lean ground beef, pork or turkey and 1/2 cup chopped onion. When the meat is about done add 1 package Taco Seasoning; drain off fat (no fat to drain with the turkey). Sprinkle meat with dash salt and pepper. Set aside. Spread one 4 oz. can Ortega diced green chilies in bottom of PAM sprayed 10x6x1-1/2 inch baking dish; sprinkle with 1-1/2 to 2 cups shredded cheddar/jack cheese top with meat. Spread one 4 oz can of Ortega green chilies over meat. Top with ? to 1 cups cheddar/jack cheese. Combine 4 beaten eggs, 1-1/2 cups milk, 1/4 cup all purpose flour, 1/2 teaspoon salt, 10 dashes of jalapeno Tabasco and dash of pepper; beat until smooth. Pour over layers. Bake at 350 degrees until toothpick comes out clean (50 minutes to 1 hour). Let cool 5-10 minutes then cut into squares. Serve this with salsa, sliced olives and sour cream as garnish. Serves 6-8This is very good without meat also. Freeze individual servings for breakfast????
