2 cups of Monterey Jack Cheese

1. Cook Macaroni to pkg directions.Meanwhile, in skillet, cook the trueky onion and garlic over med heat until meat is no longer pink; drain. Stir in tomatoes, beans, tomato paste, chilies and seasonings. Bring to boil. Reduce heat; simmer, uncovered, for 10 min. Drain Macaroni; stir into beef mixture.2. Transfer to 2 greased 2-qt baking dishes. Top w/ cheese. Cover and bake at 375 for 30 min. Uncover; bake 10 min longer or until bubbly and heated through. Serve one casserole. Cool the second casserole; cover and freeze for up to 3 months.3. To use frozen casserole: Thaw in fridge for 8 hrs. Remove from fridge 30 min before baking. Cover and bake at 375 for 20-25 min or until heated through.Serving Size:?Makes 2 casseroles (6 servings each)
