The ingredients for Sausage and Spinach Casserole are:

16 oz. Thawed, drained, Frozen Spinach.

10 oz. Vegetable Mix, onions, peppers, celery, thawed and drained.

12 oz. Mozzarella, shredded or Cheese of Choice.

1/2 C. Cottage Cheese.

2 Tbsp. Light Miracle Whip.

3 Lrg. Eggs, slightly beaten.

1 Can of Mushroom's.

1 Lb. Sausage Breakfast Sausage, or Sausage of Choice. I've also used Ground Lean Beef instead too.

1/4 tsp. Salt.

1/8 tsp. pepper, either ground red or black.

1/8 tsp. garlic powder.




How Do I Make Sausage and Spinach Casserole?

Here is how you make Sausage and Spinach Casserole:

Pre- Heat Oven to 375*.Place frozen Spinach into a pan and set to simmer about 10 min. Remove from heat, drain as much liguid as possible. Set aside in a Large Mixing Bowl, you'll need this later.In the same pan as the Spinach was in add 1tsp. of Olive Oil and saute the Frozen Vegtable Blend until the onions are translucent. Again, remove from heat and add to the Bowl with the Spinach. Add the canned Mushrooms, Seasonings, Cottage Cheese, and the slightly beaten Eggs; toss well. Again, set aside.In the same pan you've been using brown the Sausage or Meat of Choice until just browned and well Crumbled. Let cool, add to the Bowl of Previous Ingredients, add the Cheese and Miracle Whip and agiain Blend ingredients WELL.Take a Casserole Dish or Pan deep enough for the Ingredients, spray with PAM or oil lightly and pour the Mixture into it. Give a little shake- to settle the mixture evenly. Place into your Pre-Heated oven of 375* and Bake for 60- 1 !/2 hr. Deepending on the Oven. When well Browned and Cheese is melted, remove and let cool slightly to cut cleanly, the Cheese will be "stringy".Serve with a salad, rolls or enjoy alone.
