8 c summer squash (yellow & zucchini chopped)
2/3 c onion, chopped
3 T butter
2 large eggs beaten
2 T minced fresh parsley
1 c grated sharp cheddar cheese
1 t salt
1/2 t black pepper
2 c ham, diced
1 5 oz bag sea salt & black pepper potato chips (about 2 cups), crushed


How Do I Make Ham and Squash Casserole?

Here is how you make Ham and Squash Casserole:

Preheat oven to 350 degrees. Place squash & onions in large pot with small amount of water over medium heat. Bring to simmer and cook until tender, about 8 - 10 minutes, then drain into colander. Place in large bowl and mash with potato masher. Add butter and stir til melted. In separate bowl, combine eggs, parsley, cheese, salt and pepper and add to vegetable mixture. Pour into greased baking dish (I use spray) and bake for 20 minutes. Top with crushed chips and bake an additional 10 minutes or until potato chips are browned.
