? 10 oz. can of Rotel diced tomatoes and green chilies
Half a box of sliced mushrooms (break up into pieces)
12 eggs
2 cups heavy cream
Cajun seasoning (to taste) I normally use 1 tablespoon
Salt and pepper (to taste)

Here is how you make Atkins Sausage and Veggie Egg Casserole:

Directions:1. Spray Pam onto a 9x13 casserole dish.2. Add cheddar cheese to bottom of pan?so it covers the whole bottom completely.3. Add cooked sausage.4. Add onions, bell peppers, mushrooms, and Rotel.5. Whisk the 12 eggs with the 2 cups heaving cream. Add the Cajun seasoning to it. 6. Pour over the entire casserole. Add salt and pepper, and extra Cajun seasoning if you like. 7. Bake at 350? for 45-60 minutes, until a toothpick inserted in the center comes out clean.Other types to make:1. Use Swiss cheese and cooked bacon instead of the cheddar and sausage. Add whatever veggies you like, I like mushrooms and onions with the Swiss and bacon, and I use the jalapeno bacon.2. Use Swiss and cubed ham, onion, mushroom, and bell pepper.3. Use cheddar and Hillshire Farm smoked beef sausage, sliced and cooked. Add whatever veggies you like. I typically use onion, bell pepper, mushrooms, you can add salsa or the Rotel, and I?ve added diced green chilies before.
