Here is how you make Bacon, Cheese and Scallion Frittata:

Preheat oven to 325F, and coat surface of baking pan with part of the olive oil. Saute sliced scallions in 1tsp or so of the olive oil over medium-high heat, until edges are browned/charred. Let cool. Whisk egg substitute, bacon bits, cheese, garlic powder, pepper and scallions in a mixing bowl. Pour mixture into a baking dish (I like using a muffin pan divided into 6 extra-large muffins, so that I can make 1-serving portions = 3/4 cup each).
