1. Mix together flour, nutmeg, pepper, and salt. Beat eggs well and add alternately with the milk to the dry ingredients. Mix until smooth.2. Bring water to a boil.3. Press dough, 1/2 cup at a time, through the holes of a colander, into the boiling water. Cook 3 minutes or until noodles rise to the surface. Remove with a slotted spoon and place in a strainer to dry. Repeat with remaining dough.4. Meanwhile, cook bacon in a large skillet. Remove to paper towels and drain all but 1 tbsp. of bacon grease.5. Add spaetzle noodles to bacon grease and saute. Crumble bacon and mix in with noodles.6. Transfer noodles and bacon to a casserole dish and sprinkle with cheese.
