Cook 1and 1/2 cups of macaroni in boiling salted water (or no-fat broth) till tender (look at box directions) drain.
While that's cooking, in another saucepan melt 3 tbl of lite maragine ;blend in 2 tbl all-purpose flour a dash of salt and pepper. Stir to blend (like a rue)Add 2 cups of 2% milk; cook and stir until thick and bubbly. And then add 2 cups of cheddar cheese, either cube or grated. I find that grated melts faster and blends in well.
Mix cheese sauce with drained macaroni. Turn into a 1 1/2 quart casserole. You can either put slices of tomato on top or sprinkle with buttered bread crumbs or panko. The added items are not inclued in nutritional info.
