200 g lean ground beef
6 cherry tomatoes - chopped
1 cup chopped mushrooms
1 large egg - beat with a drop of low fat milk or water
1 tbsp soy sauce (I use Kikkoman)
2 tbsp basil freshly chopped or 1 large tsp dry
1 tbsp black pepper (I like spicy, alter according to taste)
1 tsp cayenne pepper or chili flakes
1 tbsp olive oil
1 medium onion - chopped
1 large garlic clove crushed, or dry flakes according to taste
1/2 cup chopped bell pepper (any color)
1 cup shredded Swiss cheese (Raclette works well)
2 tbsp low fat sour cream (I use weightwatchers)

Here is how you make Baked Macaroni and Swiss Cheese with beef and veggies:

Makes 4 large cup servingsCook wholewheat macaroni on the side (add a pinch of salt). Preheat oven - 200?C / 390?F (I usually heat the oven dish as well - 20cm x 20cm). Fry onions, garlic and beef in olive oil. After 5 minutes add soy sauce, spices and mushrooms - cook another 5 minutes. Lower heat and add cherry tomatoes and bell pepper. Let simmer for 5 minutes. Mix egg and sour cream, add about 2 tablespoons of the grated cheese to the mixture. Take beef mixture off the heat. Mix the beef mixture and egg and cheese mixture with drained and washed macaroni, transfer to oven dish. Sprinkle leftover cheese on top. Bake for 30 minutes (I use a small convection oven, depending on the size, you may reduce this time) grill for another 5 to 10 minutes depending on crisp desired.
