Here is how you make Easy Beef and Cheese Casserole:

In medium skillet, brown together beef, bell pepper, onion, garlic, jalapeno, salt and pepper. Pour out onto paper towels to drain liquids. Heat in skillet the canned tomatoes and brown rice, then add back the beef mixture; mix well. Using a medium casserole dish, layer the beef mixture and the sharp cheddar cheese, ending with cheese on top.
