1- 1/2 cups of egg substitute (or 6 eggs)
2 oz. of canadian bacon or lean ham, diced
1 cup shredded low fat cheese (like Cabot 50% reduced fat ceddar)
parsley - finely chopped fresh or dried ( I used about 1tsp. dry)
3 whole wheat tortillas (I highly recommend Joseph's oat bran, flax, and whole wheat brand)

Here is how you make Ham, Cheese, and Egg Breakfast Burritos:

Heat a medium nonstick skillet over medium heat, coat with cooking spray. Add onion and saute about 3 minutes.In a bowl, mix the egg substitute, ham, cheese, and parsley (and ground pepper if desired). Pour into skillet. Gently stir and scramble until the eggs are cooked but still a bit moist.While the eggs are cooking, heat the tortillas on a plate covered in plastic wrap for about 30 seconds or until warm. Divide the egg mixture and place onto each tortilla in the middle, then roll up. Makes 3 very plump tortillas. (So plump that you could divide into 4 tortillas instead if desired)*Notes: This recipe can be easily doubled.
