Some to try are cheddar, gruyere, manchego or leerdammer.INGREDIENTS1 cup uncooked quinoa1 small onion, finely chopped1 cup uncooked sausage (about 2 whole sausages or 2/3 pound bulk)2 eggs1/2 teaspoon kosher salt2 1/2 - 3 cups grated cheesePrep Time: 20 minutesCook Time: 25 minutesTotal Time: 45 minutesYield: 4-6 ServingsPREPARATIONPreheat the oven to 400 degrees and grease a 9x13 baking dish.Bring 2 cups of water to a boil. Add quinoa.Redice heat to simmer with a lid for 15-20 minutes, until all water is abored.
