2 lbs Idaho Potatoes, peeled and cut into chunks
1/2 tbsp EVOO
4 slices peppered bacon, chopped
2 lbs ground sirloin, 90/10
1 med onion, chopped
1/2 lb button mushrooms, quartered
2 tbsp butter
2 tbsp flour
1 1/2 cups beef broth/stock, divided
2 tbsp Worcestershire sauce
1 egg yolk
3 tbsp sour cream, light or f/f
1/2 lb blue cheese crumbles
3 to 4 tbsp chives, chopped
1 tsp paprika
pepper to taste

How Do I Make Blue Cheese Shepherds Pie?

Here is how you make Blue Cheese Shepherds Pie:

Boil potatoes, 12 - 15 minutes. Save a ladle of starchy water before draining. Heat oven proof skillet, with high sides, over medium high heat. Add EVOO and add bacon. Crisp bacon and remove to a paper towel. Add sirloin to pan and carmelize the meat. Add mushrooms and onions and cook till tender. Season with salt and pepper as needed. While meat cooks, heat a small saucepan over medium heat and melt butter, whisk the flour into butter, cook 2 minutes then whisk beef broth/stock into flour, add Worcestershire and salt and pepper to taste. Thicken 6 to 7 minutes. Pour mixture over meat. Turn on broiler.Temper egg yolk by beating it with the starchy potato cooking water. Place potatoes back into the pot you cooked them in to dry them out a little. Mash potatoes with egg yolk and sour cream then fold in crumbled blue cheese and chives. Season the potatoes with salt and pepper as needed. Spread potatoes across meat mixture in an even layer. Garnish the potatoes with paprika and bacon and place under broiler until lightly browned.
