What Are The Ingredients For Spicy health-conscious cauliflower cheese Recipe?The ingredients for Spicy health-conscious cauliflower cheese are: 1 head cauliflower, divided into florets5 medium eggs 3 rashers of smoked back bacon cut into dice-size pieces, rinds and fat removed 1 leek, in rounds 10g Parmesan For cheese sauce: 40g chorizo, diced 1 cooking onion, finely chopped 10g butter 100ml full fat milk + 400 ml water (or mix appropriate to the milk you use) 1 stock pot 1/2 tbsp olive oil 50g wholewheat flour Hot paprika, to taste (cayenne) 40g grated strong cheddar (smoked works well) Mustard powder or Dijon mustard, to taste, Salt and pepper How Do I Make Spicy health-conscious cauliflower cheese?Here is how you make Spicy health-conscious cauliflower cheese: 1. Place cauliflower, leek and eggs in boiling water for 10 mins (I used leftover roast leeks, adding direct to the dish, which also works well). Drain when done, peeling the eggs when cool enough2. Meantime, heat the butter and oil together in a saucepan and add the chorizo. Once this has released its fat, add onion, stir, then sweat with the lid on for five minutes 3. To the chorizo and onion, add seasonings, flour and cook for a few minutes till flour starts to smell nutty4. Add 100ml milk at this stage, stir well, and allow to cook off for a few minutes.5. Add the 400ml water (use the cooking water from the cauliflower, for flavour) and add the stock pot. Stir well, making sure there are no lumps of flour in the mix, and that the base of the pan is loose.6. Add cheese, then cook sauce for a further 5-10 minutes, stirring occasionally 7. In a separate frying pan, lightly fry two thirds of the bacon.8. Assemble the dish, interspersing the cauliflower and leek mix with the quartered eggs and bacon pieces. 9. Pour over the sauce, then top with the grated Parmesan and remaining bacon pieces10. Cook in a hot oven for 10 mins, grilling for a further couple of minutes if necessary to brown the top.11.
