How Do I Make SPINACH AND SWISS CHEESE FRITTATA WITH BACON?

Here is how you make SPINACH AND SWISS CHEESE FRITTATA WITH BACON:

Cook the bacon crispy and set aside. In the Frittata pan spray it with olive oil or PAM - cook the chopped onion and the cook/sauce the spinach. While this is cooking take a large measuring cup and mix up the eggs with some salt and pepper to taste. Add the grated cheese. Once the onion and spinach are ready crumble and add the bacon. Pour the egg mixture on top and allow the eggs to set. Take a rubber spatula and run it around the edges allowing the uncooked egg to flow behind the cooked egg. Continue around the pan multiple times until all the uncooked "runny" egg appears to be out of the pan. Spray the smaller of the two pas and place on top and allow to cook for 6-8 minutes. Flip the pans and allow to cook for 8-10 more minutes. Check the eggs by lifting the pan to see if they appear to be done. I do cook all of this on a medium heat. Once that looks good flip the pan again and check the other side. If both sides appear cooked then you can take a pan off and slide it onto a serving plate or flip it onto a plate - depending on which side you want to be "up" Cut into 8 pieces and serve! Enjoy!!
