While the noodles are cooking you can also brown the ground beef. Cut the cheese into small cubes (Small enough to fit into the cooked rigatoni noodle).Mix tomato sauce, garlic, onion, herbs, and beef into a red spaghetti sauce. (This can be made anyway you like, you can also buy a pre-made jar of sauce at the store.)Stuff one cube of cheddar and one cube of monterey jack into each noodle. Then line the bottome of a 9x9 (or 9x12) pan with aligned stuffed noodles so that you cannot see the bottom. Then pour about half the red sauce over the noodles and repeat. Top with any extra cheese, or parmesan cheese.Note: If you use the 9x12 pan you most likely will not be able to do two layers.
