1 Tbs. dijon mustard

1/4 cup cooked crumbled bacon

Here is how you make Cheese and Tomato Strata:

Spray a 9x13 inch baking dish with nonstick cooking spray. Arrange 5 slices of bread in the dish (I cut the 5th piece in half to fit). Sprinkle evenly with 1/3 cup cheese and half the tomato slices. Repeat the layers. Top with the remaining 1/3 cup cheese. In a small skillet, heat the oil. Add onions and cook until softened, about 5 minutes. In a medium bowl, combine the onions, milk, egg substitute, mustard and pepper; pour over bread mixture. Refrigerate, covered, at least 1 hour or overnight. Preheat oven to 350.
