8 oz Pork, fresh, leg (ham), shank half, separable lean only, cooked, roasted cut into ? inch cubes

3 oz Tomato, grape (3oz = appro 12 tomatoes) sliced in half
3 tbsp chopped Shallots or 1 sliced lengthwise
16 oz milk - natural by nature organic whole milk, 8 oz
0.25 cup Flour - Gold medal all purpose flour
4 tbsp Butter, salted
1 tbsp Extra Virgin Olive Oil
1 clove Garlic
0.25 cup Progresso Bread Crumbs - Italian Style
16.5 oz Penne Pasta 4oz Cooked (by SBSJOE)

How Do I Make Ham and Vegetable Mac N Cheese?

Here is how you make Ham and Vegetable Mac N Cheese:

Preheat oven to 250 degrees. Cook Penne according to the package al dente. Drain and set aside into an oiled flat ovenproof casserole dish. Heat olive oil in a pan. Add shallots and cook until soft on med heat, then add peas and tomatos. Cook for a 2 minutes and add ham. Heat milk with garlic in another saucepan and remove just as it forms bubbles on edges. Pour into another container. Add butter to pot and melt, whisk in flour to make roux. Slowly pour milk back to pan and continue to whisk as you add. Add nutmeg, salt and pepper. Let heat and slightly thicken then add vegetable and ham mixture to it. Let sauce thicken a bit more. Remove from heat. Stir in half of cheese to mixture. Spoon one fourth over penne and mix. Add another fourth and mix and continue two more times. Sprinkle remainder of cheese over top and then top that with the breadcrumbs. Bake at 350 for 25 minutes.
