2 eggs, beaten
1 cup brown rice, cooked
.25 cups ketchup
2 tbsp honey
2 tbsp Worcestershire sauce

1. Heat olive oil in over medium heat. Add garlic, peppers and onions. Cook for three minutes. Add mushrooms, and cook until all are tender (about five more minutes). Remove from burner.2. Allow vegetables to rest until cool enough to handle (approximately ten minutes).3. Combine vegetables, salsa, meats, salt and pepper, eggs and rice, mixing gently but well. 4. Divide into 12 equal portions and form into mini-loaves. 5. In a small bowl, combine ketchup, honey, and Worcestershire sauce. Brush mini-loaves with about half of the sauce.6. Bake in a 350 degree oven for 25 minutes.
