What Are The Ingredients For Boingo's Chili Recipe?The ingredients for Boingo's Chili are: 1 pound lean ground beef (optional)1 jug V8 juice 1 can dark red kidney beans (1.75 cups) 1 can light red kidney beans (1.75 cups) 1 can black beans (1.5 cups) 1 small can green chilis (127grams) 2 small or 1 large can diced tomatoes 1/2 jar chunky salsa -- medium or hot 1 vidalia onion 2 green peppers (yields about 2 1/2 cups chopped) 1-3 moderately hot fresh pepper (cubanelle, poblano, ancho, banana or the like) to yield 1.5 cups, chopped spices. I use: 2 cloves fresh garlic, crushed 1 large or 2 small bay leaves 3/4 teaspoon chili powder 3/4 teaspoon black pepper 1/2 teaspoon cumin 1/2 teaspoon salt 1/8 teaspoon cayenne pepper, powdered 1 tablespoon each dried parsley, organo and basil How Do I Make Boingo's Chili?Here is how you make Boingo's Chili: Brown the ground meat, drain and rinse the fat away. Move the meat to a slow cooker. Add V8 juice. Chop the sweet onion. Reserve about 2 tablespoons to use as a garnish. Add to pot. Chop peppers and add to pot. Drain kidney beans and rinse well, then add to the pot. Add the juice from the canned tomatoes to the pot. Coarsely chop the tomatoes then add them. Add all the other ingredients to pot. Cover and cook at low to medium heat until vegetables are tender, about a minimum of 2 or 2 1/2 hours. 1 serving = abotu 2 cups. Garnish with the raw onions.This is also very good as a vegetarian chili -- just leave out the meat. Then, it is just 176 calories and less than a gram of fat. It freezes well.
