Of course you can cook pintos in crock pot or big pan on stove top, but it takes a lot of hours. I cook off about 1.5 pounds of lean ground beef. Break it up so it is small pieces when cooked. Regular ground beef has a bit more flavor tho.You may use alternative meats for venison chili or low calorie chicken or turkey burger for healthier meats. I like to put more like 2 pounds of meat in tho. After meat is cooked, drain it and get rid of any extra grease and fat. If you use anything that has skin, remove skin.Next, add the williams chili seasoning to the meat and thorougly mix it. It is good for seasoning up to 4 pounds of meat but since I use so many beans, 2 pounds of meat to my total beans comes out about right.Add 2 cans of diced tomatoes and the rotel to the beans in the pressure cooker and then add the seasoned meat. If you do not want the chilli spicey and a little hot, leave the rotel out.Add chili seasoning if needed and salt to activate the seasoning ( to taste)This is done in a 6 quart pressure cooker and fills it up, so i would guess about 25 cups when you are done. It can be made lower or high calorie depending on the meat you use and how much you add. I would estimate that it is approximate 500 calories for a 2 cup serving. If you do not like tomatoes, you can leave them out. I love this with raw onions. They are good for cleaning out your arteries and keeping your tryglicerates down.
